With spring in full swing and summer around the corner, we asked Chef Jessica Entzel to highlight some of her favorite recipes to celebrate the good weather. Here’s what she recommends:
Strawberries are my favorite indicator of summer approaching. The smell of ripe strawberries is pure bliss and the flavor is nothing short of luscious. Bright red and juicy, they add a gorgeous pop of color to any dish or drink. They have a long growing season, are cultivated globally and are universally beloved. Strawberries are delicious in sweet or savory recipes, and I've picked my favorites available in Drop Recipes: Strawberry Vinaigrette, Strawberry Rhubarb Upside-Down Cake, Strawberry Mojito, and Strawberry Ice Cream. Each of these recipes pair perfectly with different points in strawberry season.
First, I start with Strawberry Vinaigrette and use the first of the season's strawberries to make an easy dressing that goes great with spring asparagus, goat cheese, peas, and spinach. I garnish with fresh strawberries and walnuts, and if I'm feeling really decadent, I add sliced grilled steak. This is, by far, my favorite salad dressing.
Next, Strawberry Rhubarb Upside-Down Cake is a lovely finish to a late spring brunch. Sweet and tart, this cake goes great with a cold glass of milk or a nice cup of tea.
Strawberry Mojitos are perfect for picnics and sitting outside and soaking up the sunshine. The sweet strawberries balance the lime and mint to create a delightful cocktail.
Who doesn't love Strawberry Ice Cream on a hot summer day? Cool, creamy and luscious, this ice cream appeals to pretty much everyone.
