Make-Ahead Weekday Breakfasts

Breakfast is the most important meal of the day, but a lot of us are too busy to make it every morning. Here, Chef Jessica Entzel highlights her favorite quick and easy weekday breakfasts we can make ahead and take with us on our way out the door.

Whether you're on the way to the office, gym, or running errands, these dishes will nourish your body, warm your soul, and streamline your morning routine. The carbs will provide energy right away, the fiber will help fill you up and the protein will help release energy throughout the day. Check them out below!

Coconut Cocoa Chia Pudding with fresh fruit and nuts is vegan, gluten-free, dairy-free, and paleo-friendly. These tiny seeds are a superfood packed with nutrients, antioxidants, fiber and protein. We love the cocoa flavor topped with fresh strawberries, blueberries and toasted nuts. It's super simple to make, and it tastes like a treat. Chia puddings also make a great mid-afternoon snack when you hit the 3 PM blues.

Savor your morning with these delicious Pumpkin, Feta & Spinach Muffins. Flavorful and moist, these veggie-forward muffins go great with cup of coffee and a hard-boiled egg.

These Fruit & Nut Bars are paleo and gluten-free. There's nothing easier than grabbing a guilt-free bar on the go! Pair with a green juice or smoothie and you've got a great start to the day in very little time.

Make a batch of Apricot Rose Granola and it will last for a few mornings in a row! Rosewater has become very hip again and this granola is lovely on top of yogurt with some fresh stone fruit. Crispy and addictive, load this granola into a cup with your favorite fruit and yogurt for a pretty parfait filled with Omega 3's.
